1 (8 oz.) package capellini pasta 1/2 c. fresh shiitake mushrooms, stemmed and sliced 1 red bell pepper, sliced 1/4 c. rice vinegar 3 tbsp. soy sauce 1 tbsp. vegetable oil 1 tsp. grated fresh ginger 1 tbsp. chopped fresh parsley
1. Bring a large pot of water to a boil. 2. Cook pasta according to package directions; add mushrooms and pepper during last 2 minutes of cooking. 3. Combine vinegar, soy sauce, oil, and ginger to make dressing. 4. Drain pasta and vegetables. Transfer to a serving bowl; combine with dressing. 5. Sprinkle with parsley before serving.
This simple dish is a good accompaniment for grilled chicken or tofu.
