4-5 c granny smith apples
1/4 to 1/2 c. water
(peeled, cored, &sliced)
3/4 to 1 c. sugar
1 to 2 T. flour
1/2 to 1 tsp. cinnamon
1/8 tsp. salt
1 T. lemon juice
2 T. butter or margarine

Directions:
Directions:
Steam or simmer the apples gently in water until they wilt and begin to become transparent (this is a partial cooking only so the apples will cook thoroughly in the pie). Combine the sugar and other dry ingredients. Mix well. Spread half over the bottom of pie crust in pan. Put apples on top of sugar mixture. Pour 1/4 c cooking liquid over apples, then sprinkle over with remaining sugar mixture. (except for a little bit) sprinkle pie filling with lemon juice and dot with butter. Roll out and fit crust over top. Seal the edges. Sprinkle remaining sugar on top and make a few slits with a knife. Bake on lower shelf of oven at 425º for 30-40 min. or until nicely browned.
