1 tsp. olive oil
2 garlic cloves, minced
4 skinless chicken breasts, cubed about 1 inch square
╝ c. lemon juice
1 c. chopped tomato (about 1 med. tomato)
╝ c. chopped fresh basil
2 tsp. grated parmesan cheese
ground black pepper to taste
8 oz. angel hair pasta

Directions:
Directions:
Bring large pot of water to boil. Put olive oil, garlic and chicken in sautÚ pan and cook over medium high heat until chicken is lightly browned. Stir in lemon juice, tomato and basil. Toss and heat. Cook and drain pasta and put in a warm serving bowl. Top with parmesan cheese and pepper and then the tomato mixture. Toss and serve immediately.

I usually add a little extra lemon juice because it evaporates so quickly. This is a favorite at our house!
