1 box manicotti
3 eggs, beaten
3 c. shredded mozzarella cheese
2 c. ricotta cheese
1/2 c. grated Parmesan cheese
1 T. dried parsley flakes
Salt & Pepper
3 c. spaghetti sauce
1/2 c. mozzarella cheese

Directions:
Directions:
Cook manicotti in boiling water for 6-8 minutes. Do not overcook. Drain well. In a large bowl, beat eggs, add cheeses, parsley salt and pepper. Stir well and spoon into manicotti. Place in lightly greased 9x13 pan. Pour spaghetti sauce over stuffed manicotti. Sprinkle with 1/2 c. mozzarella cheese. Cover with foil and bake at 350º for 45 minutes.

Try putting cheese mixture in a large ziplock bag. Snip the corner and squeeze cheese mixture into cooked manicotti.

This dish can be made ahead and frozen for up to 2 months. To bake frozen--cover with foil and bake at 350º for about 1 1/2 hours. Uncover and bake an additional 15 minutes.
