Any bones, with or without meat; use skin, too:
beef, poultry, pork, lamb, fish bones and heads.

Cover bones with water. Add 2 tbsp per qt of water of apple cider vinegar or red or white wine vinegar or lemon juice. Gently stir and let set 30 minutes. Then bring quickly to a boil and reduce heat to a simmer. How Long to Simmer: Beef: 12-18 hours. Poultry: 6-8 hours. Pork: 12-18 hours. Lamb: 12-18 hours. Fish/fish heads: 4-6 hours. After simmering, make into soup adding salt and vegetables. Never reheat bone soup in a microwave because it causes changes in amino acids.
