2 big cans tomato sauce
1 small can tomato paste
3 nice tomatos
1 large onion
2 cloves of garlic
1 med egg plant
2 med zucchini
1 med pkg mushrooms (whole)
1 large green pepper
Brown sugar
Cinnimon sticks
2 Bay Leaves
Parsley
Oregano
Salt and Pepper

In a large pan (like dutch over) put tomato sauce, tomatos chopped into small pieces same with green pepper, chopped garlic, 2 cinnimon sticks, 2 bay leaves, 2 tsp oregano, 1 tbsp parsley, salt and pepper. Bring to a low simmer for about an hour. Stirring and tasting as you go. Add more spices to your taste. As this is simmering chop other vegetables starting with egg plant, peeled and chopped into bite size pieces same with zucchini. Clean and slice mushrooms into nice sizes because they will shrink as they cook. When the tomato mixture is to your tasting add brown sugar until sweet enough for you. Then add egg plant and zucchini. Cook until done. Add mushrooms. They will only take a few mins to cook. Serve over spaghetti with garlic bread.

This is a feel as you go receipe. No two will ever be the same. Exact measurments are not needed. Freeze what ever is left over. Great even defrosted. Try putting into lasange.
