* 2 TBSP. butter
* 2 large onions/thinly sliced
* 1 sliced shallot
* 3 TBSP. flour*
* 4 cups milk~OR~half & half
* 3 medium potatoes/1/2" cubed
* 8 ounces shredded cheddar cheese
* 8 ounces cooked Polish sausage/1/4" slices
* salt & fresh ground pepper to taste

Directions:
Directions:
*Melt the butter in your soup pot,add the onions & cook over medium heat 'til softened,stir occasionally.*Stir in the flour,then the milk & potatoes.*Cover & cook,stirring occasionally,'til potatoes are fork tender {about 30 minutes}.*Stir in the cheese & sausage & cook 'til the cheese is melted & soup is heated through.*Garnish with a little more shredded cheese if you've got it.
