2 chicken breasts halved
3 tbsp safflower oil
1 tbsp olive oil
1/4 cup frshly squeezed lemon juice
1 clove garlic minced
1/4 tsp oregano
1/4 tsp tarragon

Directions:
Directions:
combine oils,lemon juice,garlic,oregano,and tarragon.Pour over chicken and marinate for 20 minutes.Bake at 350 for 35-45 minutes,baste frequently.

I always serve this with mashed potatoes.There is always some "juice" left over to pour over the chicken and/or add to the potatoes
