1 tbsp. vegetable oil
1/2 tsp. mustard/ sesame seed mixture
1 medium onion, chopped finely
1 tbsp. fresh coriander leaves
Cilantro chopped (amount to taste)
1/2 tbsp. mango powder or 1 tbsp lemon juice
1 tsp. cumin/ coriander powder
1/2 tsp. salt
pinch of hot red pepper powder
3 medium potatoes, boiled, peeled and cut into very small pieces
1/4 c. frozen peas
Dough:
2 c. white flour
1/2 tsp. salt
1 1/2 tbsp. rice flour
2 1/2 tbsp. vegetable oil

1. Break off 1 1/2 to 2 inch pieces of dough. Roll out into 6 to 8 inch diameter circles.
2. Cut each circle in half. Fold each half-circe into thirds making a pie-wedge shape.
3. Seal the point by pressing or pinching. Fill the cone two-thirds with potato mixture.
4. Moisten the lip of the cone with a little milk or water, pinch to seal.
5. Press the samosa between your palms to remove air pockets. Cover with a moist cloth until ready to fry.
