1/4 c. olive oil, 6 boneless, skineless chicken breasts halves, 1 medium onion diced, 2 garlic cloves minced, 16. oz. mushrooms sliced, 2 14.5 oz. cans diced tomatoes, 1 tsp. salt, 1/2 tsp. oregano, 1/2 tsp. basil, 1/4 tsp. pepper, 1/4 c. dry sherry, 1/4 c. chopped fresh parsley

Heat oil in large skillet. Brown chicken on both sides - remove to plate and keep warm. Add onions, garlic and mushrooms to skillet and saute until onions are soft and mushrooms start to brown. Return chicken and accumulated juices to pan. Add tomatoes and spices and mix well. Simmer 25 minutes - until chicken is cooked through,stirring occasionally. Stir in sherry and simmer 10 minutes more. Sprinkle with parsley. Serve with a tossed salad and garlic bread. Serves 4-6.
