Ingredients: 4 1/4 c. flour 1/4 c. butter (softened) 2 egg yolks 1 tbsp. sugar 1 tsp. salt 1 c. water 1 1/4 lb. semi-soft white cheese cut in oblong pieces (2" x 1/2") Oil for frying

Directions: |
Directions:1. Mix all the ingredients except the cheese and oil in a bowl and knead until very smooth (this will take about 10 minutes). 2. Set the bowl aside for about 20 minutes before rolling out the dough. (If you can make the dough 1 day and leave it in a refrigerator overnight it will be better). 3. Roll out the dough on a floured board very thin. 4. Cut in strips 6 or 7 inches long and about 2 wide. 5. Take a stick of cheese and warp diagonally until it is covered. 6. Pinch the dough to be sure it is well sealed. Continue until all cheese is used up. 7. Heat the oil and drop in the tequenos, frying them until they are golden brown. 8. Serve hot. |
