6 Catfish fillets
1/2 Lb unsalted butter, melted no substitute
Seasoning Mix:

1 T paprika
2 1/2 tsp of salt
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne powder
3/4 tsp white pepper
3/4 tsp black pepper
1/2 tsp thyme
1/2 tsp oregano

Directions:
Preheat heavy skillet on outdoor grill at least 10 minutes until a white ash forms in skillet bottom. Thoroughly combine seasoning mix ingredients in a small bowl. Dip fillets in melted butter so both sides are well-coated. Sprinkle seasoning mix generously and evenly on both sides of the fillets, patting in with your hands. Place in the hot skillet. Add one tablespoon of butter over top of fillets. Cook two to three minutes on each side until charred. Serve with fresh lemon.
