2 oz.butter
4 c. cooked fish, flaked
2 c. cooked rice
4 hard-boiled eggs, separated into whites and yolks
2 tsp. salt
1/2 tsp. pepper
1/2 c. evaporated milk

Directions:
Directions:
1. In a saucepan, heat the butter over medium heat.
2. Add the fish and rice and stir gently to combine. 3. Chop the egg whites and add to the pan, along with salt, pepper and milk.
4. Stir gently until heated through.
5. To serve, garnish with egg yolks, passed through a fine wire sieve.
