1 large head cabbage, shredded
1 onion, minced
3 large carrots, shredded
Red or green pepper, finely diced (optional)

Mix and boil:
c apple cider vinegar
1 Tbsp celery seed
c salad oil
1 Tbsp salt
1 c sugar

Boil mixture until sugar is dissolved. Pour hot mixture over veggies. Refrigerate overnight. Drain well before serving. Keeps up to 1 week.
