This recipe for Ann's Oatmeal Cake, by Barb Broderick, is from The Haun Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 cup oats 1 1/4 cup boiling water 1 stick oleo 1 cup brown sugar 1 cup white sugar 1/2 tsp salt 2 eggs 1 tsp cinnamon 1 tsp vanilla 1 1/3 cup flour 1 tsp soda 1 tsp baking powder
1 cup brown sugar 1/4 cup oleo 1 and 1/2 cup coconut 1 egg 1 and 1/2 tsp cream or milk nuts
Pour boiling water over oats and cool. Cream together: oleo, brown sugar, white sugar, salt and eggs plus cinnamon and vanilla. Add oats, flour, soda and baking powder. Bake 30 minutes in 9x13 at 350º. When cake is done, frost with frosting and put under broiler and WATCH --
Do not need to use cream -- milk is ok. This is a very moist cake and does not need to be covered too tightly.
