1 C sugar
3/4 C butter - softened
1 egg
1 tsp. vanilla
1 1/2 tsp. baking powder
1/4 tsp. baking soda
2 C flour
1/2 C English toffee bits
sugar for rolling
Directions:
Directions:
In a large mixing bowl, combine sugar, butter, eggs, and vanilla. Beat at medium speed, scraping bowl often until creamy. Add baking powder, soda and flour reducing speed to low. Beat until well mixed. Stir in toffee bits by hand. Shape dough into 1 inch balls and roll into sugar. Place 2 inches apart on an ungreased cookie sheet. Flatten each with the bottom of a glass to 1 1/2 inch circles. Bake in a preheated oven 350º. Bake 9-11 minutes or until edges are just lightly browned.
