WAFER INGREDIENTS: 1 c. butter 1/3 c. whipping cream 2 c. flour CREAMY BUTTER FILLING: 1/4 c. butter, soft 3/4 c. powdered sugar 1 t. vanilla food coloring (pink or green)
Combine wafer ingredients together. Chill 1 hour. Roll dough 1/8" thick on lightly floured board. Cut into 1 1/2" rounds. Transfer to waxed paper heavily sprinkled with sugar - coating both sides. Place on ungreased cookie sheet. Prick 4 places with fork. Bake 7-9 minutes in 375 degree oven or until lightly puffy. Blend frosting ingredients together until creamy and put 2 cooled cookie wafers together with filling. **NOTE: these cookies are very delicate, so handle gently.
