* 4 small baking potatoes/peeled
* 1 TBSP. melted butter
* 1 tsp. olive oil
* 1 tsp. dried basil
* 4 TBSP. seasoned bread crumbs
* 4 TBSP. grated parmesan cheese
* 1 1/2 tsp. water

Directions:
Directions:
*Heat the oven to 400.*Spray a baking sheet & set aside.*Cut each potato in half lengthwise,then cut each half diagonally into 1/4" thick slices,keeping slices together.*Using a wide spatula,place each sliced potato half onto the baking sheet,press with your fingers to fan the slices {still keeping them relatively close together}.*In a small bowl,combine the butter,oil & basil & brush over the potatoes.*Bake for 30 minutes.*In another small bowl,combine the bread crumbs,parmesan & water & sprinkle evenly over the potatoes.*Bake another 10 to 15 minutes 'til browned & tender.
