1/3 c. chopped fresh onions
1/3 c. chopped celery
1/4 c. melted margarine
1/4 c. plus 3 tbls. all-purpose flour
1/8 tsp. ground white pepper
1 q. homogenized milk
1 c. plus 2 tbls. chicken broth
7 oz. shredded swiss cheese
14 oz. frozen broccoli cuts

Directions:

1. Combine onions, celery, and margerine in large saucepan or Dutch oven. Saute vegetables until fragrant.
2. Stir in all-purpose flour and ground white pepper. Cook over medium low heat for 20-30 minutes, stirring often with whisk. Turn off heat.
3. Gradually stir in homogenized milk and chicken broth, mixing with whisk. Cook until slightly thickened, stirring constantly.
4. Add Swiss cheese, stir until cheese melts.
5. Thaw broccoli cuts. Steam just to heat. Do not drain. Add to soup. Heat to 170-180•F. Serve immediately.
