1 onion, chopped
1 can (12 oz.) corned beef, chopped
1 small tomato, chopped
salt and pepper if desired
5 Tablespoons mayonnaise
19 inch sheet of aluminum foil
3 bunches of fresh spinach, washed, stemmed and drained

Directions:
Directions:
Fold foil in half and lay flat. Lay spinach leaves over it, then top with chopped corned beef. Sprinkle with chopped onion, tomato and salt and pepper. Then spread on mayonnaise. (In the islands they use coconut cream.) Gather edges of foil up and twist at the top to make a tight package. Place in a baking pan. Bake at 350º for 1 hour.

Open foil, mix the ingredients a little and serve over sweet potatoes or yams which can be baked in the same oven.

It is not quite the same as those done in the umu (earth oven with hot rocks) but it will bring back good memories and taste good too.
