2 cups zucchini, peeled and grated
1 teaspoon baking soda
2 cups sugar
1 teaspoon cinnamon
3 eggs, beaten
2 teaspoons vanilla
3 cups flour
1 cup raisins, opt.
1 teaspoon salt
1 cup dates, opt.
1 teaspoon baking powder
1 cup nuts, opt.

Directions:
Directions:
Combine sugar, eggs, soda, powder, salt and vanilla. Add flour mix well. Fold in zucchini, raisins, dates and nuts. Spoon into 3 small or 2 large loaf pans. Bake at 350° for 45-60 minutes or until done.
