3 T. flour
1/2 tsp. salt
1/4 tsp. black pepper
4 skinless, boneless chicken breasts
2 T. olive oil
1 medium onion
1 T. margarine
1 cup chicken broth
3 T. lemon juice
1/2 tsp thyme
2 T. chopped parsley
lemon wedges (optional)

In a plastic bag combine flour, pepper and salt and shake to mix. Add chicken and shake to coat. Remove chicken and set the rest of the flour aside. In a large skillet warm 1 T. olive oil over medium heat and add chicken and brown on one side. Add the other T. olive oil and turn the chicken to brown the second side. Approximately five minutes on both sides. Transfer chicken to a plate and keep warm. To the pan add the onion and margarine and cook onions till soft. Stir in reserved seasoned flour till mixed. Add chicken broth, 2 T. lemon juice and thyme. Bring to a boil stirring constantly. Return chicken to skillet and cook till done. Stir in last T. lemon juice. Pour sauce over breasts on the plates and sprinkle with parsley and accent with lemon wedges.
