Chicken Noodle Casserole Recipe

4 to 5 lb chicken
1/2 onion
1/4 cup butter
5 T flour
1 cup mushrooms
1/2 cup pimento
1 1/2 cup broth
2 cups half and half
1 tsp salt
1 package of noodles
buttered bread crumbs

Directions:
Directions:
Cook chicken with 1/2 onion in liquid until tender. Bone and cut chicken into small pieces. Save 1 1/2 cups broth and with remaining broth add water and cook the noodles. In a sauce pan melt butter, add flour, broth, mushroom, cream, pimento, salt, and cook until smooth. Mix with cooked noodles and chicken and stir. Place in a baking dish and top with buttered crumbs. Bake in a 375º oven for about 35 minutes or until mixture bubbles through crumb topping. Mixture should be very moist so if you need additional moisture add more half and half before putting on bread crumbs. If you have placed your casserole in the refrig and it is cooled you may have to bake it longer.
