2 chicken breasts - poached in salt water and shredded
1 T. to 1½ T. fresh tarragon, chopped
⅛ t. black pepper
2 stalks celery - finely chopped
⅓ c. Miracle Whip
⅓ c. Hellman's Mayonnaise

Directions:
1. In medium sauce pan, cover chicken breasts with an inch of cold water to which 1 T. of salt has been added. Cover sauce pan and bring to boil over medium heat. As soon as the pan reaches full boil, turn off the heat and let chicken sit until cooked through - usually about 10 minutes. Shred chicken with two forks; do not chop.
2. Mix remaining ingredients together, add the shredded chicken and mix well. Refrigerate at least two hours.

The key to this recipe is 1) shred the chicken - no cubes, please - and 2) use equal parts of Miracle Whip and Hellman's if you are increasing the recipe.
