4 c. apples, peeled, cored & chopped; 2 c. sugar; 1/2 c. salad oil; 2 eggs; 1 tsp. vanilla; 2 tsp. vanilla; 2 tsp baking soda; 1 tsp salt; 2 c. sifted flour.

Directions:
Directions:
Pre-heat oven to 350F. Stir sugar into apples and let stand a few minutes. Combine oil and eggs and then add to apples. Sift together flour, cinnamon, baking soda and salt. Add to apples. Stir in vanilla. Pour into 9x13 pan. Bake for about 30 mins.
