"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
2 c milk 1/3 c flour 1/2 c sugar 1/4 tsp salt 2 egg yolks 1 tsp vanilla 3/4 c grated coconut
Scald milk and set aside. Mix flour, sugar and salt. Combine with hot milk & cook in a double boiler for 20 mins, stirring until thick. Add hot mixture to slightly beaten egg yolks. Return to double boiler and cook for 5 mins., stirring to prevent lumps. Add vanilla and part of cocnut. Pour into baked pastry shell and cover with meringue made of the 2 egg whites and sprinkle with remaining cocnut. Bake at 350 F until meringue browns.
