10 cups water
16 oz. package dry lentils
1 tsp salt
3-4 carrots, peeled and sliced
3-4 stalks celery, rinsed and sliced
1 large onion, peeled and chopped
1 large can diced tomatoes, drained
1/2 cup oil
2-3 tbsp parsley
1 oz. envelope LiptonŠ Onion soup mix

Directions:
Directions:
In large pot, add water and heat to boiling. Sort the lentils and rinse; no presoaking is necessary. Add to water, even if not yet boiling. Add salt. Prepare carrots, celery and onion. When water begins to boil, stir veggies into pan. Drain water off diced tomatoes and add to pan, stir. Add parsley and onion soup mix and stir. Add oil and stir. Simmer until lentils are tender, about 45 minutes. An additional cup of water may be added if you want a thinner soup.
