3 tablespoons bacon grease 1 pound cremini or button mushrooms salt 1/2 cup minced shallots (not onions) 2 sprigs fresh thyme or 1/2 teaspoon dried thyme 1 sprig fresh rosemary leaves or 1 teaspoon dried rosemary 1/2 cup red wine 2 tablespoons flour 2 cups rich beef stock 1/2 cup heavy whipping cream
Heat bacon grease and add mushrooms and 1 teaspoon salt to pan. Stir occasionally until mushrooms have released their liquid and are golden brown, about 8 minutes. Add shallots, thyme and rosemary. Cook for 2-3 minutes. Add red wine and cook until almost evaporated. Add flour and coat mushrooms. Add beef stock and cook for about 7-10 minutes. Sauce should slightly thicken. Add cream and cook for 6 to 7 minutes. Goes well with all kinds of steak.
