Ingredients: 3 heads of garlic with 1/2 inch cut off of the top 3 tablespoons olive oil salt pepper 1/2 pound of bacon chopped or cut into bite size pieces 4-5 pounds of red potatoes cut into 1 inch pieces 1 stick unsalted butter 3/4 cup heavy whipping cream 6 to 8 oz. dairy sour cream 2 cups shredded cheddar cheese 1 bunch of green onions chopped 1/2 way up the stalks

Directions:To Roast Garlic: Preheat oven to 375º F. Place the 3 heads of garlic on individual squares of aluminum foil You will need enough to wrap the head of garlic. Drizzle eahc head with 1 tablespoon olive oil. Season lightly with salt and pepper. Wrap foil around head of garlic. Roast in oven til garlic is tender and browned, about 1 hour. Let cool. To remove roasted garlic cloves, either squeeze the head to release the cloves, or pick them out with a fork. Mash the garlic until smooth.
For the Potatoes:
Fry bacon until slightly crispy remove from pan and drain. Save the grease for a mushroom gravy. Place potatoes into cold water with salt and bring to a boil. Cook intil fork tender and drain. Teturn to pan over medium heat; add butt and garlic and mix. When mixing, use a potato masher or a pastryy cutter so you still have some chunks. Add the gream and begin mixing with a big spoon. Mix til well incorporated. Add sour cream 1 spoonful at a time and mix until it is a consistency that you like. Add bacon, cheddar cheese and onions. Serve and enjoy! |
