2 ripe haas avocado; peeled and pitted
3 endives, chopped
1 jar hearts of palm, drained and rinsed
1 T. olive oil
1/2 lemon, juiced

Directions:
Directions:
Chop hearts of palm and endive into bite size pieces. With a
knife slice the avocado vertically and then horizontally. Whisk
together oil and lemon juice. Gently mix dressing with
vegetables. Season with salt and pepper.
