4 egg yolks
1/3 cup sugar plus 4 teaspoonsful
2 cups heavy whipping cream
1 bar (4 ounces) white chocolate broken into 1/4" pieces
1/2 teaspoon vanilla extract

Directions:
Directions:
Preheat oven to 300º F. In medium sized bowl, whisk egg yolks and 1/3 cup sugar until smooth. In 2 quart saucepan, bring the whipping cream to a simmer over medium high heat, stirring constantly. Add white chocolate to the cream. Remove saucepan from heat and whisk the mixture until white chocolate has melted. Gradually add to egg yolk mixture whisking continuously until smooth. Add vanilla extract. Pour mixture into 4 ramekins or custard cups. Place ramekins in 9 x 13 inch baking pan. Pour hot water into pan until ramekins are resting in 1 1/2" water. Bake about 45 minutes or unti set. Center should wiggle slightly. Remove from oven. Sprinkle 1 teaspoon sugar over each ramekin. Return to oven under broiler until sugar caramelizes. Or, a kitchen torch may be used to caramelize sugar.
