2-16 oz. cans black beans, rinsed and drained
3 green onions, chopped
1 large tomato, diced
2 cloves garlic, finely chopped
small can of green chiles (buy whole chiles and chop)
1/4 cup olive oil
2 Tbsp Rice Vinegar
2 Tbsp. dried Cilantro
1/2 tsp. ground Cumin
1/2 tsp salt
1/2 tsp. dried Oregano

Mix all ingredients together and serve with your favorite tortilla chips. This is best if it is made and refrigerated the day before you plan to serve it.
