1-16oz can sauerkraut, rinsed and drained
1/4 pound salt pork cut in cubes
1 Tbsp. butter
1 medium onion, chopped
4 cups strong chicken broth or stock
2 cups water
1/2 tsp. marjoram
1/2 tsp. thyme
2 carrots, peeled and diced
2 potatoes, peeled and diced

Directions:
Directions:
Place salt pork in heavy pan, brown and drain fat. Add butter and onion to pan, saute over medium heat until onion is translucent. Add chicken broth, water and herbs; bring to a boil. Add carrots, potatoes and sauerkraut. Simmer until vegetables are tender. Serve with good rye or pumperninkel bread.
