1 1/4 c. all purpose flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
Pinch of salt
1/2 c. butter (NOTE: this can be reduced by up to half; just increase the milk slightly)
1/4 c. milk
1 large egg
2 T. fresh lemon juice
1 tsp. vanilla extract
3/4 tsp. grated lemon peel
3/4 c. sugar
1 large green apple, peeled and chopped
1/2 c. chopped pecans

Preheat oven to 350 degrees. Grease 12 1/2-cup muffin trays, or line with paper muffin liners. In a large bowl, cream the butter with an electric beater. Add sugar, egg, lemon juice and peel, and vanilla. Mix in dry ingredients, and then add milk. Add apples, and spoon batter into muffin cups. Sprinkle chopped pecans on top of each muffin. Bake for about 25 minutes. Allow to cool on rack.
