Blueberry Buttermilk Pancakes Recipe

1 c. buttermilk
1 egg
3 T. butter, melted
3/4 c. all-purpose flour
Pinch of salt
1 tsp. baking soda
Blueberries (as much as you want, preferably wild Maine ones!)

Directions:
Directions:
Beat egg. Add buttermilk and mix. Stir in the flour, salt and baking soda and mix until blended. Add the melted butter and stir. Add blueberries. Heat a skillet or griddle until medium hot. Grease lightly (I use nonstick and don't bother to do this). Spoon out batter, about 3 tablespoons for a medium sized pancake. When bubbles appear, flip the pancakes. Serve with butter and real maple syrup.

These pancakes are extremely light and flavorful. A variation I make every Saturday for my son, Benjamin, substitutes miniature chocolate chips for the blueberries. He tracks his week by these pancakes! They are also delicious with sliced bananas, or just plain.
