4 c. water
2 T. Margarine
4 carrots
6 potatoes
1 onion
2 T. celery
1 T. parsley
Salt & pepper to taste

Thickening:
3 T. shortening
3 or 4 T. flour

Directions:
Directions:
Put water in 2 or 3-quart pot. Add margarine, cut up onion, carrots, celery and parsley. Add to boiling water. Cook for about 5 minutes. Add cut up potatoes and cook until vegetables are almost done.

Thickening: melt 3 T. shortening in a small pan. Add flour stirring constantly until it browns. Add to boiling soup. You may need to add more water, if it is too thick. You may add more vegetables, it you like.
