3 c. flour, divided
3 c. finely chopped apples (with skins on)
1 c. finely chopped pecans
3 eggs
2 c. sugar
1 c. vegetable oil
2 tsp. ground cinnamon
2 tsp. vanilla
1 tsp. baking soda
1 tsp. nutmeg
1/2 tsp. salt

Directions:

Toss 1/4 cup flour with apples and nuts. Beat eggs thoroughly in large bowl. Blend in sugar. Alternately add remaining 1 3/4 cups flour and oil. Stir in cinnamon, vanilla, baking soda, nutmeg, and salt. Mix well. Fold in apple mixture. Pour batter into greased and floured 10 inch tube pan. Bake at 350 for one hour.
