2 pounds Ahi Tuna #1 grade
Won ton wrappers
4 cups vegetable oil for frying
Wasabi paste
Black sesame seeds

Soy Lime Ginger Vinaigrette

Dressing:
Place all ingredients except oils, in a blender and blend until smooth. While blender is running slowly add oils.

With a sharp knife cut Ahi tuna into small dice. Remove all connective tissue while dicing. Refrigertae until ready to use. Cut wonton skins into triangles and fry until crip. Drain and set aside. Place 1/2 cup dressing in bowl with cold Ahi. Marinate for 30 minutes.

Place fried wontons on plate anchor with a small dot of wasabi paste. Spoon 2 tablespoons of Ahi mixture on wontons with a sprinkle of the sesami seeds. Plate and serve.
