4 boneless pork chops or 1 1/2 lbs pork cut into cubes
olive oil
1/2 small onion, chopped
2 stalks celery, thinly sliced
1/2 medium green bell pepper, chopped
2 garlic cloves, finely chopped
1 medium zucchini, halved lengthwise and cut into 1/2" slices
1 cup diced tomatoes
1 tsp dried basil
1/2 tsp dried oregano

Season pork cubes with salt and pepper; can also toss with 3tbsp of Atkins bake mix if desired; set aside. Heat oil in a large dutch oven over medium heat. Add onion, celery, green pepper, and cook for 5 minutes, until vegetables are soft. Transfer vegetables to a bowl. Add oil to Dutch oven and add pork cubes. Brown pork on all sides. Stir in zucchini, tomatoes, basil, oregano, and onion-vegetable mixture. Bring to a boil. Reduce heat, cover and simmer for 10 minutes, stirring occasionally, until pork is tender.

This is one of the recipes I didn't totally hate from back when I was on the Atkins diet (had to do something to get skinny before my wedding, you know).
