Streusel Topping:
1/2 cup all purpose flour
1/4 cup light brown sugar
1/4 tsp ground cinnamon
4 tbsp cold unsalted butter, cut into pieces

Pie:
1 refrigerated store-bought 9" deep-dish pie crust (better if made with some butter rather than all shortening)
3 Granny Smith or other tart apples, cored, peeled, sliced 1/4" thick
3 firm ripe pears, cored, peeled, sliced 1/4" thick
1/2 cup light brown sugar
1 1/2 tbsp cornstarch
1/4 tsp ground cinnamon
1 tbsp cold butter, cut into small pieces

First, make the topping in a medium bowl. Mix flour, brown sugar, and cinnamon. Add the butter and pinch the ingredients together with your fingers until a sandy, crumbly mixture forms. Don't overmix; refrigerate until ready to use.
Heat oven to 375F. Put pie crust in glass pie dish. In medium bowl, toss the apples, pears, sugar, cornstarch, cinnamon, and butter together. Place the filling in the pie crust. Sprinkle the streusel topping on top and place the pie on a cookie sheet to catch any juices. Bake for 40-50 min, until crust is golden brown and juices are bubbling. Check pie after 30 min.-- if topping is already brown, cover lightly with foil. Cool 30 min before serving.
