"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
2 egg whites
1/2 c. sugar
1/8 tsp. cream of tartar
3/4 c. M&Ms

Directions:
Directions:
Beat egg whites with cream of tartar until foamy. Gradually beat in sugar until glossy and stiff peaks form. Fold in most of the M&Ms. Drop spoonfuls onto parchment paper lined baking sheet. Garnish with brown and orange M&Ms. Bake at 250º for 30 minutes or until firm but still white. Let cool. (Some people recommend letting meringues cool slowly in turned off oven with door propped open while others say to cool on wire racks. Both methods have worked equally well for me.)

Personal Notes:
Personal Notes:
For Christmas I make these meringues without the M&Ms. Once I have them spooned up, I sprinkle the tops of half of them with Cherry or Strawberry jello powder and the remaining with Lime jello powder. They make festive red and green cookies! Another holiday alternative is to top with crushed candy canes.
