2 cups crushed pretzels
1/4 cup melted butter
2 tbsp sugar
1 cup sugar
1 carton (8-oz) whipped topping
1 pkg (8-oz) cream cheese
1 carton (10-oz) frozen strawberrie
1 large pkg or two small pkgs strawberry jello
2 cups boiling water

Mix the 2 tbsp sugar, pretzels and melted butter together and spread in a 9X13 pan. Bake at 350 for 10 minutes, then cool in the freezer. Cream together sugar and cream cheese, add whipped topping, and mix well. Spread over the pretzel mixture and chill in refrigerator. In a meduim mixing bowl, add boiling water to strawberry jello, stir until dissolved. Add frozen strawberries, and put mixture in refrigerator or freezer until it begins to thicken, then pour over cream cheese mixture. Refrigerate until ready to serve.

Our friend Millie Nelson introduced us to this, which has become a favorite. BUT in our house, I whip real cream instead of using whipped topping. So you can whip a small carton of whipping cream, add a couple packets of Splenda, then add the softened cream cheese, continuing to mix at high spead. Taste to make sure it is sweet enough for you, adjust sugar/Splenda accordingly. Also, you can add a small can crushed pineapple to the jello mixture with frozen strawberries.
