"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Stuffed Mangoes, by Mary Upperman, is from Enos and Amanda Yoder,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 lb ground beef 1/2 lb sausage 1 egg salt and pepper 1/4 cup oats chopped onion V-8 or vegetable juice Green Peppers or mangoes
Parboil mango cups in salted water for about 5 minutes, drain and salt inside before stuffing. Mix remaining ingredients except vegetable juice and shape into meatballs. Place meatballs inside mangoes. Pour vegetable juice over and bake at least one hour at 350º.
I serve this with pasta and throw the mangoes out.
