"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

4 cups flour

Directions:
In a large bowl, stir flour, baking powder and salt with a wire whisk to blend.
In a large mixer bowl, cream the butter on medium until light and fluffy. Beat in eggs, one at a time, until completely incorporated. Add the milk and vanilla extract.
Turn mixer speed to low and gradually beat in the flour mixture. Scrape down sides of bowl with rubber spatula when necessary.
Divide dough into 3 equal parts, wrap in saran wrap, flatten into a disk, and refrigerate for 2 hours or overnight.
Preheat oven to 350F.
Place one portion of dough on a lightly floured pastry cloth or kitchen counter. Let it soften and then roll out the dough to desired thickness, from 1/8 to 1/4 inch. Cut out shapes using your favorite cookie cutters. Use a spatula to transfer the cookies to your cookie sheet, lined with parchment paper or ungreased.
Bake for 10 to 12 minutes, until lightly browned around the edges. Remove from oven and transfer to wire racks to cool. Let cookies cool completely before decorating with Royal Icing.
