4 6 oz. boneless skinless chicken breasts
1 ripe haas avocado
1 cup of your favorite salsa
1 cup shredded cheddar
olive oil
flour for dusting

Directions:
Directions:
Pre-heat oven to 350 degrees. Heat 1/4 cup olive oil in skillet
over high heat. Flour each chicken breast and then flash fry,
20 seconds each side. Remove chicken and put in a baking
dish, layering 4 slices of avocado on top of each piece of
chicken and one T. of salsa. Bake 10 minutes. Remove from
oven, cover with cheese and bake an additional 10 minutes.
Serve immediately.
