1 14-15 oz water-packed artichoke
2 c frozen mixed pepper and
heart quarters, drained
onion stir-fry
1 tbsp olive oil
1 tsp minced garlic
1 15 oz chunky, Italian-seasoned
12 oz medium-sized
tomato sauce
ready-to-cook shrimp
3 tbsp dry sherry
1/8 tsp black pepper
8 oz penne, or other similar pasta

Remove and discard any tough outer leaves from artichokes. Set aside. In a 12-inch non-stick skillet, combine oil, frozen peppers and onions and garlic. Cook over medium heat, stirring frequently, 5 or 6 minutes until onions are tender. Add tomato sauce, sherry, artichokes, and black pepper. Stir to mix well. Bring to a boil, reduce heat, cover and simmer 6 to 7 minutes until flavors are well blended. Add shrimp, cover and simmer an additional 4 or 5 minutes until pink and curled. Serve individual portions of shrimp and vegetable mixture over pasta.
