1 head cauliflower
2 Tbs. butter
2 Tbs. flour
1 tsp. dry mustard
1/2 tsp salt
dash pepper
1 c. fat free evaporated milk
3/4 c. shredded cheddar cheese

Directions:
Directions:
Heat 1 inch salted water to boiling. Add whole cauliflower head. Cover and heat to boiling. Cook until tender; about 20 - 25 minutes. Prepare cheese sauce while cauliflower is cooking. Heat butter over medium heat until melted. Blend in flour, mustard, salt and pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Stir in milk. Heat until boiling, stirring constantly. Boil 1 minute. Gradually stir in cheese and cook over low heat until cheese is melted. Drain Cauliflower. Break apart and put into a square baking dish. Pour cheese sauce over hot cauliflower.
