1 baked pie shell
1 cup sugar
3 tbsp. cornstarch
3 tbsp. flour
1/2 cup cold water
1 cup boiling water
pinch salt
2 lemons - juice and zest
4 eggs separated

Directions:
Directions:
Beat egg whites adding 2 tbsp. sugar. Set aside. Combine sugar, cornstarch, flour, cold water, hot water, salt, and lemon juice and zest. Cook over medium heat until thickened. Remove from heat. Put 4 tbsp. hot mixture, 1 at a time, into slightly beaten egg yolks and blend. Then slowly stir egg yolks into hot mixture. Pour into baked pie shell. Spread meringue over top of filling, sealing edges. Bake at 350 degrees for 12 14 minutes until light brown. Cool well before serving.

Dodie often talked about this pie. However, we never had the opportunity to taste it. I found this recipe in Blanche's papers.. Dodie loved to bake and pies were her speciality. Her full name was Sophie Jenkins Rubright. She died in 1987 at age 104! I tested this recipe March 2006, with compliments from the family. Intense lemon flavor, but well balanced sweetness.
