1 prepared pie crust
2 eggs separated
3/4 cup sugar
1 lemon, juice and zest
2 tbsp. flour
1 cup whole milk

Directions:

Beat egg whites stiff with 1 tbsp. sugar. Set aside. Combine other ingredients. Stir in egg whites. Pour into pie shell and bake in 350 degree oven for 40 minutes.

I found this recipe in Blanche's papers written in Dodie's handwriting. I made this pie in March, 2006, and loved it. I used Pillsbury crust and it only takes a few minutes to prepare. It's light lemony and delicious!
