2 c sugar
1 1/2 c vegetable oil
3 eggs
3 c flour
1 t baking soda
1 t salt
1 T vanilla
3 c peeled, diced apples
1 c chopped, black walnuts
1 c coconut

Directions:
Directions:
Mix sugar, oil and eggs; beat well. Mix flour, soda & salt, add to first mixture. Add vanilla & stir. Add apples, walnuts & coconut and mix well. Pour into a greased, floured tube or bundt pan. Bake 1 hour and 15 to 20 minutes, at 350º or until toothpick comes out clean. Cool in pan about 10 minutes, then turn out.
